      <image:caption>We love working with other local producers who are passionate about their ingredients, and the sourdough loaf we make for Hodmedod’s is made just for them. Hodmedod’s work with British farms to source a range of top quality ingredients – including pulses, grains and seeds. Their loaf is made with a blend of wholegrain YQ and white flour, a porridge of their very own naked barley flakes and toasted wholegrain quinoa, all slow fermented with our Penny Bun Bakehouse sourdough starter. The mild sourdough flavour is complemented by the sweet maltiness of the naked barley, nutty depth of the YQ and the rich, earthy, tang of toasted quinoa. They are made to order, via the Hodmedod’s link below – and a selection of our other loaves are also available.</image:caption>

      <image:caption>His 12 years training included working for Peter Gorton at the Horn of Plenty in Devon, the celebrated Roux Brothers at The Waterside Inn in Bray and at Heston Blumenthal’s Fat Duck. But it was whilst working at Raymond Blanc’s Le Manoir aux Quat’Saisons under world-renowned Chef Patissier Benoit Blin that Johnny discovered his love for baking. Inspired by French techniques and with a passion for real bread, Johnny moved back home to Suffolk to open the bakery, crafting baked goods for the local area.
